Served as a main dish with salad or as a side dish - this recipe is just brilliantly simple!approx. 20 minutes
400 g noodles (e.g. broad noodles such as pappardelle)
100 g chard
70 g HANDL TYROL Tiroler Speck PGI Ham (cut in fine strips)
2 thin spring onions
150 ml Grüner Veltliner (or other dry white wine)
1 large tbsp butter
1 tbsp sunflower oil
50 g white bread
5 tbsp roughly chopped herbs (e.g. mint, chervil, parsley...)
A little mint to garnish
- Cook the noodles in salted water until al dente, drain and save approx. 100 ml of the cooking liquid. Mix together the white bread and the herbs.
- Then cut the chard and spring onions into large pieces, peel the shallots and chop finely.
- Cut the Tiroler Ham PGI Ham in fine strips and fry in a pan with a tablespoon of sunflower oil until crispy, remove from the pan and fry the chard, shallots and spring onions in the remaining oil. Douse with white wine, add the noodle water and butter and leave to simmer for a while.
- Then add in the noodles and the herby crumbs and season with salt and pepper. Garnish with fresh mint before serving.
