Ingredients for 2

4 slices of HANDL TYROL Finest Bacon
Juice of one lime
½ teaspoon honey
2 kiwis
1/3 bunch of fresh cilantro
1 spring onion
A pinch of chili powder, according to taste
Salt and pepper
4 slices of rustic bread, e.g., Ciabatta
1 avocado

  1. Peel and dice the kiwi. Squeeze the lime and whisk it together with honey in a small bowl. Wash the spring onion, halve it lengthwise, and slice it into fine half-rings. Wash the cilantro, shake it dry, and cut it very finely. Place the kiwi cubes in a bowl with spring onion and cilantro, and marinate with salt, pepper, chili to taste, and half of the lime-honey sauce.
  2. Slice the bread and toast it until crispy.
  3. Peel the avocado, remove the pit, and mash the flesh with a fork in a bowl, seasoning it with salt and pepper and the remaining lime-honey sauce.
  4. Fry the Finest Bacon in a heated pan without fat.
  5. Spread the toasted bread slices with the avocado mash, top with kiwi salsa, and garnish with crispy bacon strips before serving.

Secret tip: Serve with a poached egg!
