Tyrolean Asparagus and Potato Salad

approx. 40 minutes

Serves 4

500 g potatoes (waxy)
300 g HANDL TYROL Air-Dried Mountain Ham
500 g green asparagus
1/2 bunch of mint
1 tbsp cumin
2 lemons
8 tbsp olive oil
½ garlic clove
Pepper, salt

Preparation

Beginner
  1. Wash potatoes thoroughly and cook in water with salt for approx. 30 minutes. Meanwhile, balance out the mint and roast the cumin seeds in a pan without fat and then put to one side.
  2. Clean the asparagus and peel the bottom third. Chop off the ends. Drain the potatoes and halve. Cut the asparagus into approx. 3 cm long pieces and cook for 5 minutes in salted boiling water. Then remove and drain.
  3. Cut the Air-Dried Mountain Ham into thin strips, lightly fry in a pan and put to one side. Marinate asparagus and potatoes in cumin, a little lemon juice, mint and olive oil. Peel the garlic, chop finely and add.
  4. Season with the rest of the lemon juice, salt and pepper, cover with the fried Air-Dried Mountain Ham and serve.
