Served as a main dish with salad or as a side dish - this recipe is just brilliantly simple!approx. 20 minutes
500 g potatoes (waxy)
300 g HANDL TYROL Air-Dried Mountain Ham
500 g green asparagus
1/2 bunch of mint
1 tbsp cumin
8 tbsp olive oil
½ garlic clove
- Wash potatoes thoroughly and cook in water with salt for approx. 30 minutes. Meanwhile, balance out the mint and roast the cumin seeds in a pan without fat and then put to one side.
- Clean the asparagus and peel the bottom third. Chop off the ends. Drain the potatoes and halve. Cut the asparagus into approx. 3 cm long pieces and cook for 5 minutes in salted boiling water. Then remove and drain.
- Cut the Air-Dried Mountain Ham into thin strips, lightly fry in a pan and put to one side. Marinate asparagus and potatoes in cumin, a little lemon juice, mint and olive oil. Peel the garlic, chop finely and add.
- Season with the rest of the lemon juice, salt and pepper, cover with the fried Air-Dried Mountain Ham and serve.
