1 pineapple
50g Parmesan
250g cream cheese
125g crème fraîche
75g grated cheddar cheese
2 packs HANDL TYROL Fine Barbecue Bacon
1 pinch BBQ rub
3 spring onions

- Peel the pineapple and cut it into 2 cm thick slices. Cut out circles about 3.5 cm in diameter or use a cookie cutter.
- In a bowl, mix the cream cheese, crème fraîche, and grated cheddar into a smooth mixture. Season with salt and pepper.
- Wrap each pineapple circle with two slices of barbecue bacon to form a cylinder. Secure with a toothpick.
- Fill the BBQ shots with the prepared cream cheese mixture and sprinkle with BBQ rub.
On the Grill:
- Preheat the grill to about 130-140°C.
- Place the filled BBQ shots on the grill rack and cook over indirect heat for about 45 minutes.
- Brush the bacon with BBQ sauce towards the end of the grilling time.
- The BBQ shots are ready when the bacon is crispy and the cheese is melted.
Tip: Garnish with chopped spring onions and grated Parmesan.
