Tyrolean taco

Ingredients for 2 people

Guacamole: 
1 lime
2 tomatoes
1 spring onion
2 avocados
1 Tbs olive oil
1 generous pinch chilli powder
Salt
Pepper

Topping;
4 cherry tomatoes
½ red onion
½ bunch coriander
2 baby spinach leaves
1 sweet red pepper
½ chilli pepper to taste
1 to 2 Tbs black sesame seeds
4 corn tortillas
60 g HANDL TYROL Finest Ham Cubes
1 can refried beans
150 g feta cheese
Salt and pepper to taste
1 glug Tabasco sauce to taste
1 to 2 Tbs olive oil to taste

Put a little Tyrolean swing into your tacos – add Finest Ham Cubes Fine Speck cubes for cooking Handl Tyrol

  1. To make the guacamole, squeeze the lime. Remove the tomato stems by cutting out in a wedge shape and finely dice the tomatoes. Finely slice the spring onion.
  2. Halve the avocados, remove the stones, then scoop out the flesh with a spoon and place in a bowl. Mash the avocado well with a fork, combine thoroughly with half the lime juice and the olive oil until creamy. Stir in the diced tomato, chilli powder, spring onion and season with salt-and-pepper.
  3. Wash and quarter the cherry tomatoes. Peel the onion and slice finely. Wash the coriander, pluck the leaves and chop finely. Wash the spinach leaves and shake dry. Remove the core from the red pepper and slice finely. Slice the chilli pepper into fine rings. Dry fry the sesame seeds in a pan. 
  4. Dry fry the tortillas briefly on both sides. Fry the Ham Cubes in a preheated pan with no fat. Spread the refried beans on the tortillas and top with guacamole, cherry tomatoes and red pepper slices. Crumble the feta cheese over and top with the Speck Cubes.
  5. Garnish with sesame seeds, spinach leaves, chilli rings and coriander. Season with the remaining lime juice and a little salt and pepper to taste, drizzle with Tabasco sauce and/or olive oil.

    *If you cannot find refried beans in your local shop, you can simply drain a can of red kidney beans and blend to a smooth paste with a little salt and olive oil and some Tabasco sauce to taste.
