Tyrolean Bacon Butter

Ingredients

250 g butter
160 g HANDL TYROL Finest Bacon
Salt
Rosemary
Fresh bread to serve
Optional: pink peppercorns

Method

  1. Preheat the oven to 160°C fan oven. Line a baking tray with baking paper and spread the bacon slices on it. Bake in the oven, checking regularly, until crispy and golden brown.
  2. Allow the crispy bacon slices to cool. Set aside about 1/3 of them for decoration. Cut the rest into coarse crumbs with a knife.
  3. Beat the soft, room-temperature butter in a large bowl with a hand mixer until it becomes white and fluffy.
  4. Carefully fold the bacon crumbs into the whipped butter until they are evenly distributed.
  5. Use a spoon to scoop out small balls of the bacon butter and place them on small plates or a serving platter. Break the bacon slices set aside into larger pieces and scatter them over the butter balls.
  6. Garnish with fresh rosemary needles and optional pink peppercorns. Serve with fresh bread.

Tip: Bacon can be crisped up particularly quickly and easily in the microwave. To do this, lay the slices out on kitchen paper and cook on high power for approx. 2-3 minutes until golden brown.
