Ingredients for 4 hotdogs

4 hot dog buns
4 Frankfurter/Wiener sausages
4 slices HANDL TYROL Finest Bacon
50 g HANDL TYROL Finest Ham Cubes
1 Tbs oil
4 Tbs ketchup
4 Tbs mustard
50 g Ketchup-Mayonnaise mix

Fried onions:
2 onions
4 Tbs flour
1 tsp paprika
1 pinch salt
Clarified butter for frying (approx. 150 g)

Danish cucumber salad:
1 cucumber
Salt
1 Tbs sugar
Juice of one lemon

Method

Fried onions:

  1.   For the fried onion rings, peel the onions, halve and slice very finely, or use a mandolin.
  2.   Mix flour, paprika and salt and coat the onion slices in this mixture.
  3.  Heat plenty of clarified butter in a saucepan and fry the onion rings until golden brown, then allow to drain on kitchen paper.  

Danish cucumber salad:

  1. Cut or use a mandolin to create very fine slices of cucumber with the skin on and arrange in a glass jar or container with lid.
  2. Sprinkle salt, half of the sugar and half of the lemon juice over the top and close the jar or container. Every now and again turn the container so that the juice produced infuses all of the cucumber slices.  
  3. After one hour, adjust the seasoning with salt, the rest of the sugar and lemon juice, stir and allow the cucumber slices to drain before serving.

Hotdog Method

  1. Heat the hotdog rolls for approx. 5 minutes in a preheated oven (fan: 180°C). 
  2. Heat 2 sausages in hot water for approx. 5 minutes. Fry the Speck Cubes in a preheated pan with no added fat. 
  3. Fill 2 hot dog rolls with sausages. Serve garnished with cucumber salad, ham cubes, fried onions and ketchup- mayonnaise mix.
  4. Wrap 2 sausages in two bacon slices placed side-by-side, grill the bacon-wrapped sausages over direct heat on the barbecue until crisp.
  5. Place the sausages with the bacon into toasted rolls. Serve garnished with cucumbers, fried onions, mustard and ketchup.

Instead of the home-made cucumber salad, these hotdogs can also be served with a simple garnish of sliced pickles.
