Ingredients for 2 people

4 eggs
100 ml cream
200 g boiled potatoes, from the day before
100 g HANDL TYROL Finest Ham Cubes
1 Tbs parsley, chopped
2 Tbs clarified butter
1 tsp salt

Level of difficulty:
  1. In a bowl, whisk together the eggs, cream, caraway and salt until the egg yolk and whites are combined.
  2. Ideally, make two separate omelettes. The volume is too much for one single pan.
  3. In two large frying pans, heat a generous amount of clarified butter with the Ham Cubes, divide the sliced potatoes (boiled the previous day) between the two pans.
  4. Pour the egg and cream mixture over the potatoes and ham, reduce the heat and cover the pans. Cook the omelettes until the egg has set.
  5. Finally, garnish with chopped parsley and enjoy.

What else does the fridge have to offer? From the last few mushrooms to that little portion of pasta from yesterday, throw anything you like into the omelette pan.
